One of the questions I get asked a lot is how to make gluten free eating stress free. I know, it’s sound easy, right? And it is. But when you’re trying to eat gluten-free and trying to keep active, healthy, and “sane,” the last thing you want to worry about is what to make for dinner.

I think a lot of us tend to over complicate gluten-free meals. Especially if you’re new to gluten-free. It can be a bit daunting if you don’t know where to start or have support. On top of that, you’re trying to make sure you get all the right nutrients you need as well as proper fuel/refuel for the day. Phew! That’s a lot to think about.

Trust me, I get it. I pretty much panicked when I heard I had to eat gluten free. I studied every ingredient and thought my life would result in eating rice cakes and smoothies.

That is another reason why I started this blog. I’ve lived through that whole scenario. And today I am who I am because of it. A gluten free “sherpa guide” if you must.

But let’s think about this way. Let’s make eating gluten free just like staying active. All you need to do is keep it simple, focus on what you can do, and enjoy it.

In what ways can we simplify gluten free meals in order to stay fit and healthy?

  • Focus on REAL food first – Potatoes, starchy vegetables/tubers, oils (olive, avocado, or coconut oil, organic dairy/coconut milk, eggs, grass fed or free range meats, wild caught fish, rice, fruit, vegetables, nuts, seeds, and spices. Doesn’t sound like a lot but trust me, you can do a lot with it!
  • Look for ways to combine REAL FOODS –> stir fry, egg bakes/casseroles, soups, and salads!
  • Seek help from others! Check out all the recipes on the Udis Gluten Free community page and recipe board. Check out pinterest for simple gluten free ideas. Heck, i’ve got tons of main meal ideas right here!
  • Look for quality certified gluten free brands to use (non gmo, real ingredients, multiple allergy friendly products, etc.) Another reason I love udis gluten free. Soy free and nut free options plus they are Non GMO.
  • Add Spice! Yes, you got it. Spice can take a bland meal up a notch, especially when it’s gluten free. My favorite herbs/spices to add to meals are chili pepper, natural chili sauce, garlic, smoked paprika, onion flakes, fresh basil/cilantro, and any type of rosemary or herbs de provence blend.

Which leads me to this gluten free flatbread salad recipe.

It’s a super simple, fresh, “fit” recipe with a touch of spice to top it off !

Gluten Free Steak Salad Flatbread

Ingredients

  • 8 inch gluten free pizza crust (thin)
  • 1/2 to 2/3 cup tomato sauce
  • 6 -8 oz grilled steak strips (or chicken, tempeh, etc.)
  • 1/4 cup chopped cilantro
  • 1/2 cup sliced onions
  • shredded salad mix of choice
  • 1/2 cup slices zucchini
  • dash of pepper
  • dash sea salt
  • olive oil
  • 1/2 cup feta or goat cheese
  • 1/4 tsp garlic powder or minced (optional)
  • chili sauce to top

Instructions

  1. First make sure you have your proteins cooked. See notes for steak. Next, add a few tsp of olive oil and slightly sauté your onions and zucchini in a pan until tender with a dash of garlic powder or minced garlic. Set aside.
  2. Cut your pizza crust into triangles and toast in toaster oven or real oven for 3-4 minutes at 400F. Removed and place the rest of your ingredients on top of each triangle. Toast again for a few more minutes until out edge is crispy. Remove and add pepper, sea salt, cilantro and chili sauce.
  3. You can add your shredded salad last with the cilantro if you'd rather the ingredients more crisp!

Notes

for searing steak - Heat oil in a large skillet over high heat until heavily smoking. Season steaks with pepper and course sea salt and add to pan and cook, flipping a few times with tongs. Check steaks after 6-8 minutes to see if internal temperature has reached 130°F for medium. Add butter and any extra seasoning and then to pan continue to cook for couple more minutes
